Harvest: Hand-picked.
Extraction: Continuous cold process (max 27°C).
Filtration: After milling, the oil is filtered to ensure optimal preservation until consumption.
Storage: Kept in stainless steel containers and stored under nitrogen at a constant temperature until bottling.
Use: Ideal for enhancing delicate dishes with legumes and vegetables, excellent raw on grilled meat or fish, and on all Mediterranean cuisine dishes.

At last I found an oil that really reflects the denomination of origin: full, deep flavour and true Sicilian character. I also use it to season legumes and simple dishes. Recommended.
