Sicily PGI Olive Oil
The "Sicilia PGI" designation is awarded to olive oil produced in accordance with specific conditions and requirements laid down in an official production specification.
The oil must be obtained exclusively from olives belonging to Sicilian cultivars, grown in Sicily and harvested by hand, carefully transported in crates that allow proper ventilation and milled within 48 hours.
Our Amabile Sicilia PGI Extra Virgin Olive Oil is produced from "Nocellara del Belice" and "Biancolilla" olives grown in the countryside around Castelvetrano (TP), and complies with all the parameters laid down in the production specification in order to guarantee the final consumer a product of very high quality.
Before packaging or bottling, the oil undergoes physicochemical laboratory tests to verify parameters such as acidity, peroxide value, polyphenols and Delta K, followed by a Panel Test (see our dedicated article).
Once these checks have been passed, it can be stored in stainless-steel tanks under a nitrogen blanket or packaged and labelled as soon as possible, clearly displaying the wording "Sicilia PGI", the lot number, the olive harvest year and a progressive number.
The body responsible for the controls is the Regional Institute of Wine and Oil of the Sicilian Region.
