What Does PDO Olive Oil Mean?
PDO stands for "Protected Designation of Origin" and identifies an olive oil produced in a specific geographical area in compliance with a strict production specification governing the correct cultivation and harvesting of olives, their milling and subsequent packaging or bottling.
PDO olive oil protection consortia, located throughout Italy, aim to guarantee consumers a high-quality product that has undergone strict traceability controls.
Our Amabile PDO Valle del Belice Extra Virgin Olive Oil, produced in the countryside around Castelvetrano (TP), is obtained by milling olives of the renowned "Nocellara del Belice" cultivar. The olives are harvested by hand, transported to the mill in perforated crates and milled on the same day in order to prevent fermentation processes.
Once the oil has been produced, it undergoes laboratory chemical analysis and a Panel Test (if you do not know what it is, you can find a dedicated article on our blog). After passing these checks, it is certified as PDO and stored in dedicated stainless-steel tanks under a nitrogen blanket, in temperature-controlled premises, until packaging.
